Tortellini Soup

A quick and easy recipe (not to mention crazy scrumptious!).  A big shout out to Lizanne who introduced me to this just after Emy was born, it is now a family favorite.

Ingredients:
2 tbl butter
1 tbl minced garlic
8-10 cups chicken broth
1 can 28oz diced tomatoes (I use the basil oregano flavored)
a big bunch of spinach
8-10 basil leaves
1 lb totellini (the best and biggest you can find)

Sautee garlic in butter 2 minutes.  Add chicken broth and bring to a boil.  Add tortellini and tomatoes.  Cook 6 mintues.  Add spinach and basil, cook 2 minutes more.  Enjoy!

I made this soup tonight and it was delicious! I love tortellini. But as we were speaking of soups, Matt really wants the recipe for the soup you brought us after Luke was born...so when you get a chance, would email it to me please. Hope everything is going well!
